I was in a hit and run accident- the police placed it under aggravated battery/assault and now my ins company needs the police report in order to pay damages however the report was sent to the state attorneys office so the records will not be updated for another 2 months. I need my car and I provided the ins company (seminole casualty ins) with an OFFICIAL RECORDS COPY of what I could obtain and that was not enough.

So are they asking for the original police report? You can obtain a copy of the police report from the department (whether highway patrol or local)...and ask specifically for a copy of the exact report (not just a summary, etc.)
If you have a copy of the exact report, I don't see how the insurance company can refuse to accept it! I also think it's odd that the state attorney's office is going to take 2 months to update a report.

Do you not have collision coverage? That is, are the considering this only under Uninsured Motorist Property Damage?

Yup, if you like to pursue the claim under the uninsured motorist claim the insurance company would require the proof that the at-fault driver was actually uninsured at that time. Tracking down the runaway motorist is necessary before acknowledging the claim under uninsured motorist coverage.
Now, if you have collision coverage you can receive the claim from your insurer much easily. Also, the insurer would stand a chance to subrogate against the responsible driver in the due course.
