I’ve a health insurance through my employer. But they refuse to show a health insurance deduction on my paycheck. Instead, they manually do a deduction from my gross salary. My paychecks don’t show in detail how many hours did I work and how much I earned. Even it doesn’t show that I’ve an insurance premium that I’m responsible for.
Can they adjust my hours on my paycheck as they refuse to show an insurance deduction there? Is it legal?

This is entirely unlawful under both state and federal law. Complain IMMEDIATELY to your state's Dept of Labor and to the US Dept of Labor, Employee Benefits Security Administration, and you can even throw in a complaint to the IRS while you're at it.
The bad news is, you can expect to be fired for filing the complaints. The good news is, you might win a civil action for being discharged under such circumstances. You could consult with a labor/employment law attorney about this.
