My uncle passed away last month at 93 from cancer. Up until december 2010 everything was left to my sister in the will. My cousin managed to get him to change the will so that he got everything. My uncle left both of my sister's a life insurance policy with them as beneficery. My cousin called to say that they should have went toward the funeral and that we would be getting a letter from an attorny. Can he contest the policy. One has already been paid and we are waiting on the other.

He can contest anything he wants. But the beneficiaries's claims will probably not be affected. He can demand that they contribute to the cost of the funeral, and they can respond by telling him to POUND SAND.
Nothing to worry about here until someone gets served with a summons to appear in court. And even then, there is probably very little to worry about, unless there is a failure to respond to the summons or make an appearance on the appointed day.

For the policy that has already been paid, no contesting. He'd have to pursue you legally now for that. And I'm betting that will soon be the case for the other insurance policy.
There's not legal standing, but anyone can try. The insurance policy was a contract, it said if I die pay person X this amount of money. I'm paying you money to guarantee that this payment takes place upon my death.
Will's don't mean much in general, and what someone thinks the life insurance money should be used for can think that all day everyday. Unless it was contractually set up to work that way, there's little, nay practically nothing that can be legally be done to force it
