I've heard that a policyholder can change the beneficiary designation on his policy, if his children from previous marriage grow into adults. Is that possible, even if the decree says otherwise?

Well, we don't know what the divorce decree says, do we?
Normally, a person can change the beneficiary of a life insurance policy at any time, minor or adult.
But if there is a lawful order of a court of "competent jurisdiction", one must abide by that order, or return to that same court to have its earlier order vacated. If the court refuses to vacate its prior order, that order may then be appealed to a higher venue, and, ultimately to the Supreme Court of the United States..
