If you can prove that the work on your neighbors property caused your damage.

We do not have additional sinkhole coverage, just catastrophic. We are not able to get sinkhole coverage beyond catastrophic because our insurance company stated we have cracks in our driveway/sidewalks and can't have the additional coverage (last March). The problem is that our 'Insurance Agent neighbor' claimed a sinkhole on their house and NOW our house has NUMEROUS cracks in the home(last February). Cracks forming on our pool deck, cracks forming from windows and spreading like a spider, nail pops in our upstairs living space. All of this happened after they pumped cement truck after cement truck "under" their house. Now they just installed a beautiful built in pool (yes, same neighbors!!) and when the trucks were there digging for the in-ground pool, my house now has more cracks in tile, grout popping up etc. My home is not even 5 years old. Do I have any recourse?!?!?!?

Get a contractor or contractors and inquire to find out if this problem is occurring primarily because of the work being done at your neighbor's.
Based on the findings u may confront your neighbor and your insurer about this issue.
To me it seems to be more of a weak construction problem, don't know if it's covered under home insurance.

Don't know how to prove this is happening because of their lack of sinkhole (to be quite honest). Any suggestions from the experts?

I think a good and experienced contractor can inspect your home and tell you the reason for the cracks. Depending on his judgment, talk to your neighbors and your insurer. If it's proved that your neighbor's construction is responsible for the damage to your house, his insurance could be paying you liability costs.
