self-employed=insurance claim recoverable roof money

I was a contractor until 2 years ago,but took a company job.I don't have my inc. anymore. I have 4 family members with roof hail damage and they want me to do the're roofs to make sure they are done right. I have got bids from roof contractors that are all over the recoverable amounts. Can I contact the adjuster with the total price from the supplier and print up my own invoice for the remainder of the recoverable amount,or a little under,and on the invoice state (MY NAME EXTERIORS),and at the bottom line state make all checks payable to me?
