my grandmother and i had a change of beneficiary done shortly before she passed away, which makes me primary, my sister and uncle were listed to be the beneficiaries on the original policy. can they contest my policy?

Depends on the insurer and the situation. Insurance companies know that they are prime targets for lawsuits, so they tend to be a tad spooked by the possibility.

Would they attempt to make the case that you made the change in order to receive the sole death benefit knowing/thinking she would die soon?

It is always the primary beneficiary who gets the priority. Secondary beneficiaries receive the payment only if the primary beneficiaries do not qualify for the payment. It is the present beneficiary who gets paid by the insurer.
