Options re: ins totallying my car for hail damage

I have some pretty significant hail damage. I have a 2004 Jeep Grand Cherokee with 108,000 miles. I live in Colorado It has been in a couple accidents, but all damage has always been fixed and it runs great and looks nice (well prior to becoming a golf ball from hail.) The insurance company said that since most panals will need to be replaced, they will most likely total the car out. I am concerned about this. I'm not sure what to expect. What happens if I want to keep the car, because it is totally driveable? I know they will let me buy the car back, per se, and deduct the amount I have to buy it for from the value of the car. Does anyone know what these amounts will most likely be around? Also, will I still be able to have insurance on my car, even liability? We are planning on buying a new car in 2 years, but I need to have surgery that will cost us 25K and will keep us financially tight for 2 years, so buying a new car now really isn't an option. What are the negative effects of buying back my totalled, hail damaged car? Will my insurance go up, with it just being hail damage (obviously I didn't cause this)?

It is a 4x4, V8, with BRAND NEW tires (haven't even been put on yet, being switched this weekend with the snow tires) and a set of winter tires too.....Don't know if any of that matters
