I have been told that my HO 6 insurance does not cover water damage. So, what type of insurance do I need, to make sure that I get coverage for water damage?
Broken pipe that causes a sudden burst as well as Leaking interior pipe that has been going on for a while and then all of a sudden shows up through the sheet rock?

Standard coverage, subject to deductible, all HO forms.

Repairs to the pipe itself probably not covered as a "maintenance" item. Damage to walls from leaking water probably covered, subject to deductible. Depending on the age of the home, if poor workmanship on the part of the installing plumber, it could be covered as a negligence claim against the plumber (California, for example, generally holds contractors liable for their workmanship for up to 10 years).
The "water damage" that is not covered is flood damage, sewer back up.

Max has explained everything quite clearly. It's the source or the cause of the damage that's so important. The adjuster will determine if it's 'negligence' after all, and if so whether it's your's or someone else's. Age of the home is certainly important as it goes on most occassions. If you're in a flood-prone area you should apply for flood insurance.

If so, you'd need to apply for the national flood insurance program.
