Do you have some type of agreement with the party that you worked for? If so, place a lien on the property and/or file suit against them.
The insurance company is under no obligation to make sure you get paid. Like you, they have a contract with their insured to make a payment to their insured.

It may be too late to file the lien on the property. Most states require a preliminary lien notice, and do not allow a lien to be filed more than 20 days after performing the work.
If you are a licensed contractor, why are you performing work without a written contract that requires payment, and in the event of non-payment, the imposition of attorney's fees if a civil action becomes necessary?
