If I made a claim with an insurance company for the company that cause damage to my car and supplied them with all my evidence. If I sue them will they supply their insured with all the information I gave them for my claim?

You have asked a query regarding the pre-trial period that's known as 'discovery'. During this phase, lawyers representing both parties will investigate and gather evidence.

During this process, attorneys are allowed to interview witnesses, drivers and others who're associated with the case. The depositions will have lawyers representing both parties. All that's said during a deposition gets recorded by a stenographer, who later prepares a transcript. This can be used by both parties (as evidence) during the trial.
Remember: Such information can be used by both the attorneys during a trial.
