If I recieve a maximum settlement from an insurance company for pain and suffering and feel its not enough, can i sue my own insurance company for further pain and suffering?

You can file a claim for under insured motorist bodily injury. You can't "sue" your own insurance company for no reason whatsoever (well, you can... and you'd lose).
Why does everything think you have to "sue" to get anything? You simply _file a claim_. This means you are asking for the coverage provided under your policy.
You also can't accept the settlement from the other carrier if you have UIMBI without putting your carrier on notice of the settlement.
