I am perplexed as to what my insurance covers and why I even have it. According to adjuster it only covers a car running into the house, a tree falling but it is capped at $500, my deductible, and not much else.

I'm still wondering about the real cause of your ceiling fall.
Another thing, you should've clarified what's in and what's out right at the very beginning.
