We recently had hail damage and an adjuster came out along with an adjuster from a construction company. Its looking like they are totaling out the roofs on all 3 buildings and also replacing all damaged siding or completely replacing all siding depending on if they can match current siding. I would like to reshingle the roof on the garage and other out building. Can i do these repairs my self and put some money back in which I will be saving to do other repairs to our home, as it is in need of some other updates. please let me know. and Thank you in advance if you can help me.

If they write you a check for a total loss (it may not include something called "holdback" in a "replacement cost" policy) and you can perform the necessary repairs for less than that amount, you may keep the difference and use it as you please.
What you cannot do is submit invoices for materials for your other remodeling projects and expect the insurance company to pay for that with the holdback.
