Is your concern what happens when your bills exceed the insurance coverage?
If another party was responsible for your damages, they are personally responsible for whatever amount exceeds their insurance limits. If their coverage is $30,000 per person, and your claim is for $50,000, the insurance company will write you a check for $30,000. You then have to sue the other party for your unpaid damages, and hope they have the money to pay for it.
If any portion of your medical expenses have been paid for by your own health insurance, any money you receive is first payable to them for up to 100% of what they paid on your behalf. So you may also need to negotiate a reduced "subrogation" amount with them.
If you don't believe you can do that for yourself, then you'll have to pay an attorney to represent you, and that will cost you money, too.
