An adjuster from state farm gave us a quote of $9000.00 to replace our shingles due to wind damage. We found some one to replace them for $7500. We have $1000 deductable. Now they will only pay us $7500. and we have to come up with $1000. Is this correct?

Well, yes and no. Your policy states that the insurance company will pay the cost to repair. In this case what is the cost to repair? I'd say they have an argument that it's $7500. But it makes no sense on how they would be able to pay the lesser amount. If the insurance company assessed the damage at $9000 then they should have issued that payment. I'm guessing you told them of the $7000 estimate as I don't know of any other way they would know about this amount. If _you_ told them the repair cost was $7000, not $9000 then this is really on you.
Go back to the insurance company and tell them you are not going to use that $7000 repair company as.... they are not good, won't do the work, whatever.
The insurance company will find it difficult to estimate the loss at $9000 and then issue payment for less. If _they_ come up with $9000 how can they then say it can be repaired for less. That is, don't _give_ them a reason to issue a lesser payment.

Cash the check, pay the deductible, make the repairs and keep a neat $500 for yourself. As tcope says, don’t give them a reason to pay out a smaller amount.
