I wish to transport my car from NY to Chicago.
I am able to qualify for a transit permit from the dMV in NY..
once I have valid insurance. The car is 2008 LR2 Land Rover..

Existing auto insurance policies usually cover the cars during transit. So, you might not need a separate transit insurance with temporary coverage. After you reach your destination, you can cancel the existing policy and buy a new one from Chicago

I just purchased a vehilce in the states. I am canadian and wish to bring the car home. My canadian insurer will not cover me because the car is in America,
Can I purchase temporary insurance (max 5 day permit) to get it across the border, and then buy Canadian insurance?

You'd have to obtain that insurance from a Canadian insurance company -- if you are a Canadian resident. Why won't your insurance company cover the new vehicle? Makes no sense. Your Canadian insurance policy should normally cover you while driving in the US.
US/Canadian coverage in Mexico is a different problem. Mexican law makes it a crime to drive in Mexico without a Mexican-issued insurance policy. The US has no such laws.
