I am changing careers and need some flexibility and earnings potential. My goal is a 75k per year income. Does being an insurance adjuster in NJ make sense and how does one learn more about the career path and necessary licenses etc.

If $75k is a long term goal then yes, it's possible. Expect low wages when starting out
Most people I know start at the bottom in insurance companies, such as taking initial reports of claims and/or handling very simple claims.

A recent issue of Best's Review indicated that there has been a reduction in the number of property & casualty adjusters in the past 12 months. While this is responsible for a slight earnings increase among adjusters in that same time period, it is indicative of the lack of jobs in that sector of the insurance business. You may want to reevaluate your career goal.
